The 6am Breakfast Club

Let's be real. Getting up at 6am SUCKS. Despite my initial perkiness at sunrise yoga and twittering birds, a few late nights (and even later deadlines) has left me slamming off the alarm and retreating back into the warmth of my covers. 

But you know what they say, when life give you lemons...swap them for blueberries and turn it into a lip-smackingly delicious breakfast. Because of course if there is anything that's going to get me out of bed - it's food. 

Here are three of my favourite recipes worth leaping out of bed for. 

OVERNIGHT OATS

Courtesy of the dreamy Madeline Shaw, this overnice oats recipe is simply the best. Make them before you go to bed and wake up to this yummy rice-pudding-like treat.  First off place 75g of oats, 1 tsp of cinnamon, 1 tsp of honey and 175ml milk in a bowl (I like to use rice or almond milk) and mix well. Top with berries and coconut flakes and leave to soak for 1 hour or overnight. This recipe is a game changer. You're welcome. 

QUINOA PORRIDGE

Swap oats for nutrient heavy quinoa (cook a batch in advance and warm it up on the stove with high-protein almond milk) and the chuck in whatever you fancy. A dollop of greek yoghurt is always a winner and you can't go wrong with a freshly sliced apple and cinnamon combo. Alternatively give it a savoury twist with some sliced avocado and a couple of soft-boiled eggs. Sprinkle with chilli flakes and a dash of tamari. Gwyneth Paltrow your heart out. 

BANANA OMELETTE

I'm yet to try this one but I am promised it's a goody. All it takes is whisking one mashed, ripe banana with two eggs and cook in coconut butter, as you would an omelette (fold in half when it's ready and don't let it get too firm). Top with yoghurt and fruit and get ready to take on the day.
